Delicious Simple Recipe for Mochi (Recipe for Mochi An)

Prepare to delight your taste buds with this traditional Japanese sweet treat – Mochi! This recipe, part of our "New Year's, Japanese Style" series, offers a delectable twist on the Basic Savory Mochi, perfect for wrapping around your favourite ice cream.

Ingredients

  • 1 ½ cups of Mochiko (glutinous rice flour)
  • ½ teaspoon of kosher salt
  • 1/3 cup of water
  • ¼ cup of granulated sugar
  • 2 tablespoons of light corn syrup

Instructions

  1. In a large bowl, combine the Mochiko and salt, forming the mochiko mixture.
  2. In a medium saucepan, bring together the water, sugar, and corn syrup. Heat over medium-high heat until the sugar dissolves, which should take about 5 to 6 minutes.
  3. Make a well in the center of the mochiko mixture and pour in the sugar syrup.
  4. Knead the dough until it becomes smooth and elastic, which usually takes around 4 to 5 minutes. Once formed, shape the dough into 3-inch circles, each 1/8 inch thick.
  5. Flatten the circles and dust them with mochiko. Place them on a baking sheet lined with parchment paper.

Tips and Notes

  • Form the mochi immediately after making the dough for the best texture.
  • If you have leftover mochi, you can toast them under the broiler for a few minutes.
  • This recipe has a difficulty level of hard.
  • The total active time for this recipe is 55 minutes.
  • Mochiko is a type of glutinous rice flour commonly found in Japan, available at Asian markets. It's distinct from katakuriko, which is potato starch often used in Japanese cooking.

Storage

  • The mochi can be stored, covered, in the refrigerator or freezer. If stored in the freezer, they can last for up to 7 days, but should be defrosted before using.

Enjoy the chewy goodness of these sweet mochi circles, and let them add a touch of authentic Japanese flavour to your celebrations!
