Delicious Simple Recipe for Mochi (Recipe for Mochi An)

Ingredients
- 1 ½ cups of Mochiko (glutinous rice flour)
- ½ teaspoon of kosher salt
- 1/3 cup of water
- ¼ cup of granulated sugar
- 2 tablespoons of light corn syrup
Instructions
- In a large bowl, combine the Mochiko and salt, forming the mochiko mixture.
- In a medium saucepan, bring together the water, sugar, and corn syrup. Heat over medium-high heat until the sugar dissolves, which should take about 5 to 6 minutes.
- Make a well in the center of the mochiko mixture and pour in the sugar syrup.
- Knead the dough until it becomes smooth and elastic, which usually takes around 4 to 5 minutes. Once formed, shape the dough into 3-inch circles, each 1/8 inch thick.
- Flatten the circles and dust them with mochiko. Place them on a baking sheet lined with parchment paper.

- Form the mochi immediately after making the dough for the best texture.
- If you have leftover mochi, you can toast them under the broiler for a few minutes.
